They are popular for a reason as they’re easy to make and always a crowd pleaser. But if you are looking to serve something different, white beans make a wonderful base for a creamy and flavorful dip.

White beans have a naturally smooth texture making them perfect for blending into a creamy dip. And the best part is that they are packed with nutrients, budget friendly and very customizable. Add any herbs and spices you love for a different taste sensation every time, like this spicy white bean dip recipe.

White bean dip ingredients

  • White beans: I use cannellini beans, but other white beans like navy or great northern also work well. For this recipe, I stick with canned beans for convenience and ease.
  • Olive oil: I use extra virgin olive oil for its rich flavor which helps make the dip smooth and velvety.
  • Garlic: For this white bean dip, I use a fresh clove of garlic. But, as fresh garlic can be quite strong, I suggest starting with just one clove and adjusting to taste as you go.
  • Lemon juice and zest: Fresh lemon juice adds a bright, zesty flavor that really lifts the overall flavor of the dip. Lemon zest gives it an extra burst of freshness.
  • Seasoning: For seasoning use salt and pepper to taste and fresh or dried thyme for garnish.

White bean dip recipe tips

  • Beans: You can use canned or jarred white beans for convenience, or cook dried beans from scratch if you prefer. If using dried beans, make sure to cook them according to the package instructions, let them cool completely and then proceed with this recipe.
  • Food processor: A food processor or blender works well to make the dip smooth and creamy. Add all the ingredients and blend until you reach the texture you like, from extra smooth to slightly chunky.
  • Immersion blender: If you don’t have a food processor or blender, a strong hand-held immersion blender also works. Place the ingredients in a tall, narrow container and blend. You may need to add a little water to help everything come together.
  • Adjusting consistency: If the dip turns out too thick while blending, add a bit of water, lemon juice or olive oil until it reaches the texture you like. If it becomes too thin, blend in a few more beans.
  • Extra creamy: Adding more olive oil will make the dip extra creamy.
  • Fresh herbs: Make it extra herby by adding fresh herbs like thyme, chives or parsley. Mix them in or sprinkle on top before serving.

How to store

This dip with white beans is perfect to prep ahead of time or to make in a larger batch. Store the dip in a sealed container in the fridge for up to 3-4 days.

Ingredients

  • 1 can (15 ounce) cannellini beans drained and rinsed
  • 1 clove garlic
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon lemon juice
  • ½ teaspoon lemon zest
  • ¼ teaspoon Kosher salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  • Combine the drained cannellini beans, garlic, olive oil, lemon juice and zest, salt and pepper in a blender or food processor.
  • Blend on high until smooth and creamy or until you reach your desired texture. If the mixture is too thick, add a small splash of water to loosen it. 
  • Taste and adjust the seasoning as needed.
  • Transfer to a serving bowl and garnish with a drizzle of olive oil and a sprinkle of dried thyme. Serve with crackers, pita bread or fresh veggies.
